Summer Pasta Salad

Am back after a very long gap. How are you all? Hope you all had a wonderful Onam. I celebrated Onam with my cousins in Dubai. (I do have a lot to tell about ma trip, but in the coming posts). We couldn't plan out for a home made Sadya but we did order for one. I know for all of us, the center point of celebration revolves around the Onam Sadya.

Kochi dint welcome me well. Am not keeping well from the day I arrived and not at all in a mood to cook. Sigh... Dubai Hangover... Its not that I was lazy. I did cook some dishes but was not in a mood to photograph it and post it. To be specific dint have any story associated with those dishes to tell you.Yeah, I find blogging interesting only if I interact with you through ma little stories. I feel its those description that spices up my recipes. Do you feel so? Do you get bored? If so, feel free to tell me.

Coming to the recipe, as you know, we prefer a less spicy but nutritious breakfast. I got some wheat penne other day. (I was never fond of Italian food until my friend, Sayli took me to Freskka. I miss Bangalore and the restaurants over there). I decided to make a salad with it just like the one we had from Kashi Cafe. It is a very cozy place. Have u been there? If not, do visit there when you are in Kochi next time. Its lovely I must say.

So, for breakfast we had pasta salad, milk, boiled egg and toasted bread. I fed ma 94 years old Grand dad with the same menu. You know what he asked me??? " Edi, sambavam nalla tasty aanu. Pakshe athinte akathe aa kuzhal enthanu? " (It means, "dear, its very tasty but what are those long tubes inside the dish"). I just couldn't stop laughing.

Ok... so that was ma short "story" associated with this dish. Why don't you try this. Its packed with nutrition.

Have a healthy start!!!


  1. Whole wheat penne : 1.5 Cup
  2. Zucchini (Salad cucumber / summer squash) : 1 No.
  3. Tomato : 1 No.
  4. Yellow and Red Capsicum : 1 Each
  5. Carrot : 1 No.
  6. Papaya : 1/4 of one ripe but a firm one.
  7. Salad vineger : 1 Tbsp.
  8. White pepper powder : 1/2 Tbsp
  9. Dried Oregano, Thyme and Basil : To taste (or 2 large pinch each)
  10. Salt : To taste
  11. Mayonnaise : 1 Tbsp (Optional)


  1. Cook wheat penne in 4 cups of water and salt to taste. ( It took around 15 minutes to cook the penne in microwave in maximum power). Once done, wash it in running cold water and transfer it to a colander to drain excess water. This prevents it from sticking to each other.
  2. Cut all the vegetables and papaya thin and length wise (1'' inch long) to match the size of penne. Remember to deseed tomato before cutting it. 
  3. Add the remaining ingredients and mix well.
  4. Transfer into a serving bowl and enjoy with toasted bread!!!
You can omit papaya if you dont prefer the taste.
You can skip Mayonnaise for a healthier version.

    A recipe gets ur signature only with some ramblings so say what u have to :) I love reading those and have some pasta salad.
